I love getting ahead of the 30-a-week-vegetable requirement. It’s a great boost for my gut health and it’s a weekly mini- challenge that gets me thinking about diversity in my diet. I usually start the week with a fridge full of vegetables and good intentions. I get so excited about buying vegetables and imagining what I am going to do with them during the course of the week. Sometimes my exuberance gets the better of me and I run out of steam because I imagined I had more time in the day. The best way to use up vegetable is in soups. See my curried sweet potato and coconut soup I made last week to use up a bag of sweet potatoes and my vegan cheese. Another great way is to make stir fry.
Remember that chicken hack I did on Sunday? Well here is the stir fry I did for dinner last night. If you are vegan or vegetarian you can substitute your choice of protein at the end where I add the chicken. Ideas for protein for vegans are seitan nuggets, which resemble chicken. You can also use tofu, or black beans. Have fun and make your version. You can also just leave it as is and enjoy, without the addition of any protein.
Pak choi stir fry
Ingredients
- Olive oil for the wok
- One small red onion finely diced
- Three cloves of garlic finely chopped
- 2 cm of grated fresh ginger
- 125 g mushrooms sliced
- 100 g of Pak Choi chopped
- 100 g courgettes sliced
- 1 tablespoon of light soy sauce
- 1 Tbls fermented soy bean and chilli sauce
- 1 tablespoon of peanut butter
- One small chili diced
- 1 tablespoon of sesame seeds
- Optional – 4 pre cooked chicken drumsticks ( from the chicken hack on Sunday, removed from bone and diced into bite size pieces
- Rice to serve
Instructions
- Heat olive oil in wok add onion stir fry for 2 minutesOlive oil for the wok, One small red onion
- Add garlic and ginger and stir into onionsThree cloves of garlic, 2 cm of grated
- Add mushrooms and cook until golden125 g mushrooms
- Next up add the rest of the ingredients100 g of Pak Choi, 1 tablespoon of light soy sauce, 1 Tbls fermented soy bean and chilli sauce, 1 tablespoon of peanut butter, One small chili diced, 1 tablespoon of sesame seeds
- Cook until done ,not too crunchy and definitely not overcooked. If you are vegetarian you can serve at this point otherwise add the chicken – Remove chicken from bone and cut into bite sized pieces.Optional – 4 pre cooked chicken drumsticks ( from the chicken hack on Sunday, removed from bone and diced into bite size pieces
