I had leftover fillet and green beans in my fridge along with 3 black mushrooms. There’s was a packet of pork rashes in there too that Brian had another plan for. I sneaked one strip for the green beans because green beans are bleh on their own. Here’s what I did. Started at 17:35 served at 18:08. Excluding rice cooking time enjoy
Fillet with green beans and Mushrooms
Ingredients
- fillet about 350g
- 3 mushrooms
- Onion
- Garlic
- Pork rashers
- Green beans
Instructions
- Leftover fillet about 350g 3mushrooms, onion garlic pork rasher green beans. There are a few surprise ingredients in the photos that follow just to keep you on your toes
- Slice pork rasher into lardons - fancy word for cubes. These look more like rectangles. Salt them and fry until brown on both sides.
- Cut fine green beans in half
- Add add to rasher
- Add small ramekin of water
- Put lid on pan for 2-3 min
- Surprise ingredients - dry fry in a pan some almond slivers shake and toss until golden
- Remove green beans and pork from pan. Splash olive oil into same pan. Nobody's got time for washing too many pans
- Add chopped onion fry until translucent
- Add chopped garlic stir for a minute
- Add 3 sliced mushrooms fry for another min or 2
- Now for some fun add a glug of brandy.
- Set a match to it and stand back. The bigger the glug the bigger the flame so be careful. I'm talking about a tot here
- Another surprise ingredient cream. Add about half a cup
- Slice the fillet into small stroganoff pieces along with 2 Tbls of chopped parsley (don't you love surprises)
- Serve with Tastic because everybody loves Tastic
- Sprinkle those almonds over thd green beans
- Don't overcook the fillet. It's been cooked already. The sauce should be hot enough to warm it through
- Enjoy. Remember candles and your choice of something to drink.
