love prawns, I mean who doesn’t. Brian is always in charge of buying, cleaning and grilling them and he’s perfected his technique to a fine art. On these occasions I have a “day off” but I’m still responsible for whatever we feel like with the prawns. Spring onion and Sage spaghetti…

Prawns with Spring Onion and Sage Spaghetti

Ingredients

  • Olive oil
  • 2 hands full of flat leaf parsley
  • 50g butter
  •  Handful of sage
  • 4 spring onions
  • Spaghetti

Instructions

  • Olive oil, 2 hands full of flat leaf parsley, about 50g butter, generous handful of sage, 4 spring onions and spaghetti
  • Prawns - work on 4-6 prawns per person. These are a good size, we like the box size 16-20 for 700g. These were from FoodLoversMarket. Fruit and Veg City in Vincent. These are Vannamei from India. This box cost R165
  • Get the spaghetti on first
  • Make sure you time the prawns with the spaghetti otherwise the prawns get cold
  • Put the butter and olive oil in a pan this one I realized very quickly was too small
  • Chop spring onion
  • Add sage and cook for about 2 min
  • Add parsley
  • Once all the herbs are cooked add the hot spaghetti
  • Stir and add more olive oil. Check seasoning too. I added salt and pepper
  • Serve
