Flank Steak Flatbread with smashed cucumber

Ingredients

  • 100g cooked flank steak sliced
  • 2 flatbreads
  • 1 small Mediterranean cucumber
  • 1 garlic clove
  • 1 avocado pear mashed
  • sprinkle chilli flakes, black pepper and origanum
  • 1 tbls olive oilo

Instructions

  • Pre heat air fryer to 200ºC once temperature is reached switch off and place flatbread inside to warm up.

  • Smash the cucumber with a rolling pin. You want chunky bits of cucumber. Add minced garlic and a pinch of salt. Place in sieve to drain over a small glass bowl to catch the cucumber juices. Add the olive oil to the cucumber juices
    1 small Mediterranean cucumber, 1 garlic clove, 1 tbls olive oilo
  • Place the flatbreads on plates and spread the mashed avo over them, using ½ the avo on each flatbread
    1 avocado pear mashed
  • Top the avo with the drained smashed cucumber
  • Add the sliced marinated flank steak on top and sprinkle with the chilli flakes, pepper and origanum

  • Finish off by drizzling the cucumber and olive oil juices over the steak. Serve immediately
