Cranberry Coleslaw

Ingredients

  • 1 small green apple Slice and julienne
  • 1/2 stick celery stalk or 1 baby fennel
  • 1 baby cabbage purple or green shredded
  • 1 heaped Tbls cranberries
  • Lemon or lime zest and juice to taste
  • 2 heaped tsp creamed horseradish or 1 tsp mustard powder
  • 2 heaped Tbls double cream Greek yogurt
  • 1-2 Tbls mayonnaise or The WOOLWORTHS French Style mayo
  • 1 tsp fennel seeds or coriander seeds bloomed in a pan
  • 2 tsp sesame seeds dry toasted in frying pan

Instructions

  • Prepare all the fruit and vegetables and add to a bowl
  • 1 small green apple Slice and julienne, 1/2 stick celery stalk or 1 baby fennel, 1 baby cabbage purple or green shredded, Lemon or lime zest and juice to taste, 1 heaped Tbls cranberries
  • To a separate bowl add the rest of the ingredients to make the dressing. Add the creamed horseradish, if you don't have this, use 1 tsp mustard powder or wasabi paste as great alternatives, double cream Greek yogurt, mayonnaise, zest and a squeeze of lemon juice and fennel seeds along with salt and pepper to taste
    2 heaped tsp creamed horseradish or 1 tsp mustard powder, 2 heaped Tbls double cream Greek yogurt, 1-2 Tbls mayonnaise or The WOOLWORTHS French Style mayo, 1 tsp fennel seeds or coriander seeds bloomed in a pan
  • ONLY ADD the dressing just before serving. Sprinkle with sesame seed
    2 tsp sesame seeds dry toasted in frying pan
