Leftover fillet about 350g 3mushrooms, onion garlic pork rasher green beans. There are a few surprise ingredients in the photos that follow just to keep you on your toes
Slice pork rasher into lardons - fancy word for cubes. These look more like rectangles. Salt them and fry until brown on both sides.
Cut fine green beans in half
Add add to rasher
Add small ramekin of water
Put lid on pan for 2-3 min
Surprise ingredients - dry fry in a pan some almond slivers shake and toss until golden
Remove green beans and pork from pan. Splash olive oil into same pan. Nobody's got time for washing too many pans
Add chopped onion fry until translucent
Add chopped garlic stir for a minute
Add 3 sliced mushrooms fry for another min or 2
Now for some fun add a glug of brandy.
Set a match to it and stand back. The bigger the glug the bigger the flame so be careful. I'm talking about a tot here
Another surprise ingredient cream. Add about half a cup
Slice the fillet into small stroganoff pieces along with 2 Tbls of chopped parsley (don't you love surprises)
Serve with Tastic because everybody loves Tastic
Sprinkle those almonds over thd green beans
Don't overcook the fillet. It's been cooked already. The sauce should be hot enough to warm it through
