Pak choi stir fry

Ingredients

  • Olive oil for the wok
  • One small red onion finely diced
  • Three cloves of garlic finely chopped
  • 2 cm of grated fresh ginger
  • 125 g mushrooms sliced
  • 100 g of Pak Choi chopped
  • 100 g courgettes sliced
  • 1 tablespoon of light soy sauce
  • 1 Tbls fermented soy bean and chilli sauce
  • 1 tablespoon of peanut butter
  • One small chili diced
  • 1 tablespoon of sesame seeds
  • Optional - 4 pre cooked chicken drumsticks ( from the chicken hack on Sunday, removed from bone and diced into bite size pieces
  • Rice to serve

Instructions

  • Heat olive oil in wok add onion stir fry for 2 minutes

  • Add garlic and ginger and stir into onions
    Three cloves of garlic, 2 cm of grated
  • Add mushrooms and cook until golden
    125 g mushrooms
  • Next up add the rest of the ingredients
    100 g of Pak Choi, 1 tablespoon of light soy sauce, 1 Tbls fermented soy bean and chilli sauce, 1 tablespoon of peanut butter, One small chili diced, 1 tablespoon of sesame seeds
  • Cook until done ,not too crunchy and definitely not overcooked. If you are vegetarian you can serve at this point otherwise add the chicken - Remove chicken from bone and cut into bite sized pieces.
