I woke up this morning looking at the gift I bought to take along to lunch later today. I love nuts. I bought a bottle of Omega almond butter. It’s an odd gift but I decided I’d create a recipe to go with it just for Ingrid. So here is an easy recipe for Ingrid’s Almond Butter and Macadamia nut Cookies.
Brian was hanging about waiting to taste test them. I needed a guinea pig, other than myself. “Are they ready yet?” he wined like a 5 year old. “No!” they have to cool first to get them crisp and snappy. He circled back not even 5 minutes later, as I slapped him on the wrist. He’s impatient and I spend a great deal of time managing this. Today was no different. Finally I capitulated and he tried them. “Oh, I have to have another one, I can’t quite decide if they are good enough” he said winking at me. So I wrapped some up in a small bag to gift to Ingrid along with the bottle of almond butter.
Every month we get together with Ingrid and Erich for lunch. They are our son-in-law, Darryn’s parents. We scheduled it because time flies and life gets busy and when you look again half the year has passed. This way we get to enjoy a meal together and a great catch up talking about all sorts of stuff.

Ingrid’s Almond Butter and Macadamia nut Cookies
Ingredients
- 200 g butter at room temperature
- 85 g almond butter
- 100 g caster sugar
- 300 g flour
- 75 g macadamia nuts roughly chopped
Instructions
- Preheat oven to 180°C
- Line a baking tray with baking paper, big enough to hold 30 biscuits
- In a mixing bowl, add the butter and the almond butter and mix together to ensure and even mix
- Add the caster sugar and beat until fluffy
- At the flour and continue to beat until the mixture comes together
- Stir in the macadamia nuts
- Use a tablespoon to measure out equal quantities of Dough
- Shape the dough into little balls and flatten with your fingers or the back of a spatula
- Bake in a preheated 180°C oven for 10 minutes or until golden Brown
- Cool on a wire rack
- Enjoy with a cup of coffee or tea
- These biscuits create a perfect gift to give a friend
- To make them a little more fancy melt white chocolate, and drizzle over the top
- Sprinkle the chocolate with coconut
