I love chocolate and I’m not sure why I have never made choc chip cookies before. These Chocolate Chips & Nibs Cookies are perfect to share with a friend in need of some TLC. A friend was in hospital and I just got news from another friend who had discovered a growth on his kidney. His words to me were “just because you’ve been given a cactus, doesn’t mean you have to sit on it” I laughed hard when he said that and I instantly recalled seeing cactus biscuits at sugar.com the previous day when I collected the chocolate fountain for my nephews 9th birthday.

After returning the chocolate fountain, I decided to buy the cactus biscuit and stick it into a chocolate cupcake for him and his wife. I also bought 2 big choc chip cookies for my other friend in hospital. I was shaming myself for not making these, but I was short on time and this was an emergency.

Life throws you curveballs all the time and you have to learn to juggle or be grateful they are not made of glass. After my lovely hospital visit and with a bit more time the next day, I decided to raid my pantry for choc chips and nibs. I had 150g of dark chocolate chips so I decided to work my recipe out around that. Nothing ventured nothing gained as I fiddled with the ingredients quantities and tweaked here and there. I wanted coffee in them too because it blooms the flavour of chocolate. I dropped a sample off with my friend, who was now home from hospital and asked for her honest feedback. I hope you find them every bit as chocolately delicious too.

So here’s the thing, I love a crispy, crunchy cookie not a chewy one. If you like it crunchy you can bake them a little longer or even “dry” them out in the air fryer. The choice is yours – these Chocolate Chips & Nibs Cookies will be delicious either way.

Chocolate Chips & Nibs Cookies

Servings 24

Ingredients

  • 250 g butter room temperature
  • 200 g brown sugar
  • 200 Caster sugar
  • 450 g self raising
  • 75 g cocoa powder
  • 1/2 tsp salt
  • 1 teaspoon instant coffee powder
  • 50 g almond flour
  • Two extra large eggs
  • 2 teaspoons of vanilla extract
  • 150 g dark chocolate chip chips
  • 100 g cocoa nibs
  • 2 tablespoons hot water

Instructions

  • Heat oven to 180°C fan assist big oven
  • Line 2 baking trays with silicone baking sheet or baking paper big enough to hold 24-26 large cookies {60g each)
  • In a stand mixer fitted with the K-beater, creaming attachment or paddle attachment cream the sugars and butter together until light and fluffy. My Kenwood takes about 8-10 minutes – set aside until needed
    250 g butter room temperature, 200 g brown sugar, 200 Caster sugar
  • In a separate bowl sift together the flour and cocoa powder
    450 g self raising, 75 g cocoa powder
  • Add salt, instant coffee powder and almond flour and whisk to ensure an even mix
    1/2 tsp salt, 1 teaspoon instant coffee powder, 50 g almond flour
  • Add the eggs one at a time to the creamed butter mix.
    Two extra large eggs
  • Add the vanilla and mix again
    2 teaspoons of vanilla extract
  • Beat in the flour mix
  • Add the choc chips and nibs and hot water and beat to ensure all the chips and nibs are evenly distributed
    150 g dark chocolate chip chips, 100 g cocoa nibs, 2 tablespoons hot water
  • Using a ice cream scoop create 60g balls.
  • Place on baking mat, use a fork and press down to flatten and spread the cookie dough. Bake in preheated oven for 10-12-15 minutes. The cooking time depends on how much you flattened them and how thick they are.
  • Cool on wire rack
  • Drizzle with extra white or dark chocolate for a bit of fun.

Notes

Air fry for 3-5 minutes if you prefer a crunchy cookie.
For an alternative substitute the dark choc chips with 150g chuckles and 50g chocolate buttons roughly chopped
