Here’s a quick and easy Creamy, Dreamy Beetroot Ice Cream. No fuss required to make a crème anglaise which is a fancy way of saying custard in French. No baine Marie required either to ensure a perfectly smooth and velvety finish to the custard. You don’t even need an ice cream machine although I do have one and my Creamy Dreamy Beetroot Ice Cream was ready in an hour.

She needed it in a hurry for a dinner party she was hosting in two days. Her feedback on Sunday was “Oh, Jax! It was incredible 😲 👍 wow … “phenomenal” was the word used by one guest! My husband was confused at first ( not being a lover of beetroot, I had to be careful) but I may have converted him!

Creamy Dreamy Beetroot Ice Cream served on Chocolaty Chocolate Beetroot Brownie Crumble

Scoop the Creamy Dreamy Beetroot Ice Cream into ice cream cones and dip them in black toasted sesame seeds. This is a brilliant pairing of complimentary flavours. If you want to be a little more dramatic crumble my Chocolatey Chocolate Beetroot Brownies into a crumble, air fry if you like and cool so ice cream doesn’t melt too fast. Drizzle with maple syrup and sprinkle with black sesame seeds.

Ingredients

  • 250 ml beetroot purée cold
  • 1 tin condensed milk
  • 250 ml whipped cream
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  • Mix beetroot and condensed milk together
  • Add salt and vanilla extract. Stir to ensure and even mix
  • Fold in cream
  • Pour into ice cream maker and churn for 50-60min
  • If you don’t have an ice cream Machine, place a container with a lid in the freezer to cool down. Make the ice cream and pour mixture into cooled container. Refrigerate and stir every 30minutes until cream forms. Keep the lid on between stirring to ensure no icicles form in the mixture.
  • Add brownie crumbs to a plate, top with sesame seeds or any nuts of your choice and drizzle maple syrup over the top. Macadamia nuts and pistachios are also a very good choice
