I made Flank Steak Marinade for a beautiful 1kg flank steak I bought from my butcher up the road. As it’s just the 2 of us at home I had leftovers, so I turned the perfectly juicy and pink pieces of flank steak into a sandwich. I had my Flatbreads in the freezer so they were a perfect base to carry the fillings to my mouth. A quick re-heat in the air fryer and they were ready to go. What a delicious combination of avocado pear, smashed cucumber and flank steak.
So what did I do with the leftover Flank steak I made earlier this week?
🔥 Charred Flank Steak on Flatbread with Smashed Cucumber & Avo
A hand-rolled flatbread, blistered in the pan for smoky depth and brushed with garlic butter, serves as the base for this fresh, satisfying sandwich. Mine were straight out the freezed and reheated in the airfryer
It’s topped with:
• Slices of juicy, charred flank steak, grilled medium-rare for maximum tenderness, with a peppery crust
• Creamy avocado, gently mashed for richness that balances the heat.
• Smashed Mediterranean cucumber, crunchy and refreshing, releasing a burst of juice.
• A drizzle of cucumber juice and extra virgin olive oil for a bright, hydrating lift.
• Finished with a scattering of chilli flakes, cracked black pepper, and dried origanum—adding heat, aroma, and an earthy herbal finish.
Each bite is a marriage of vibrant textures: smoky meat, creamy avo, crisp cucumber, soft bread
Flank Steak Flatbread with smashed cucumber
Ingredients
- 100g cooked flank steak sliced
- 2 flatbreads
- 1 small Mediterranean cucumber
- 1 garlic clove
- 1 avocado pear mashed
- sprinkle chilli flakes, black pepper and origanum
- 1 tbls olive oilo
Instructions
- Pre heat air fryer to 200ºC once temperature is reached switch off and place flatbread inside to warm up.2 flatbreads
- Smash the cucumber with a rolling pin. You want chunky bits of cucumber. Add minced garlic and a pinch of salt. Place in sieve to drain over a small glass bowl to catch the cucumber juices. Add the olive oil to the cucumber juices1 small Mediterranean cucumber, 1 garlic clove, 1 tbls olive oilo
- Place the flatbreads on plates and spread the mashed avo over them, using ½ the avo on each flatbread1 avocado pear mashed
- Top the avo with the drained smashed cucumber
- Add the sliced marinated flank steak on top and sprinkle with the chilli flakes, pepper and origanum100g cooked flank steak sliced, sprinkle chilli flakes, black pepper and origanum
- Finish off by drizzling the cucumber and olive oil juices over the steak. Serve immediately
